Grown by Twin Oaks Seed Farm (VA) – Phaseolus lunatus – 85 days (dry)
This year we tried three bush lima varieties from Emmalea Garver Ernest’s lima breeding program at the University of Delaware. We’re looking for heat tolerance and bush growth habit (we’re tired of building trellises for the moment), as well as resistance to mold and staining on the dry beans. We especially liked this one, standing out for good yields and for their attractive, unblemished appearance at the dry stage, needing only minimal sorting. The dry beans are red and black, making them much less prone to staining and visible blemishes than lighter colored limas. Red Jasper Lima is bred for heat tolerance (though the summer of 2025 wasn’t hot enough here for us to fully test that) as well as for productivity and quality in the fresh shelling stage. We have been more focused on dry bean use however – these have a rich and hearty/meaty flavor and they retain a deep reddish-brown color when cooked. We plan on doing a larger growout next year, so will have larger quantities. We’ll also take a closer look at shelling stage use. 74 seeds/oz
