We tried a handful of New Mexico chile varieties in 2024 and 2025 and this is our favorite. Good yields of large (8-10 inch) beautiful green chiles on resilient 3-foot plants that did well in extremely dry (2024) and extremely wet (2025) conditions. Giuzeppi Chiles were recently developed and released by Faron Lytle at Solar Dry Chile Farms in New Mexico’s Hatch Valley. They are named after his great-grandfather Joseph Franzoy (Giuzeppi is Joseph in Italian). These are fairly mild chiles at around 1200 Scoville units, but don’t expect a sweet pepper. Giuzeppi is best roasted and peeled, the traditional way to use New Mexico green chiles. The large size makes this go quicker than most varieties. They can then be cooked in all kinds of ways: with mac and cheese, in a quesadilla, on a sandwich, on a burger, with chicken, or even alone with a little salt. They freeze well once roasted. You can also harvest them red; they make great chile flakes. 108 seeds/gram.
